Ingredients
– 1 cup rice flour
– 1 cup jaggery (or brown sugar)
– 1 cup water
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 cup grated coconut
– 1/4 teaspoon cardamom powder
– Oil for greasing the pan
– 1/2 cup milk (optional)
– 1/4 cup chopped nuts (optional)
Method
1. Begin by combining the rice flour, jaggery, water, baking soda, and salt in a mixing bowl. Stir until smooth.
2. Next, mix in the grated coconut and cardamom powder. If you like, add milk and chopped nuts for extra flavor.
3. Heat a paniyaram or aebleskiver pan on medium heat. Lightly grease each cavity with oil.
4. Pour a spoonful of the batter into each greased cavity, filling them about halfway. Cook for a few minutes until the bottom turns golden brown.
5. Carefully flip each paniyaram and cook the other side until it’s also golden and cooked through. Remove them from the pan and enjoy.
