Ingredients

– 1 cup of rice
– 2 cups of water
– 1 cup of mixed vegetables (like carrots, peas, and beans)

– 1 teaspoon of mustard seeds
– 1 teaspoon of turmeric powder
– 1 teaspoon of salt
– 1 tablespoon of grated coconut
– 2 green chilies (optional)
– 1 tablespoon of lemon juice

Method

1. Rinse the rice under cold water until the water runs clear. Drain it well.
2. In a pot, heat oil over medium flame. Add mustard seeds and wait until they pop.
3. Stir in mixed vegetables, turmeric powder, and salt. Cook for about 3 minutes, stirring often.
4. Add the rice and water. Bring it to a boil, then reduce the heat to low. Cover and simmer for 15 minutes or until the rice is soft.
5. Remove from heat, fluff the rice with a fork, and mix in grated coconut, green chilies, and lemon juice.
