Ingredients
– 2 cups of rolled oats
– 1 cup of plain flour
– 1 cup of brown sugar
– 1 teaspoon of baking powder
– 1 cup of unsalted butter, melted
– 2 cups of blackberries, fresh or frozen
– 2 tablespoons of honey
– 1 tablespoon of lemon juice
– A pinch of salt
Method
1. Preheat the oven to 180°C (350°F). Grease a square baking pan with some butter or line it with baking paper.
2. In a large bowl, mix the rolled oats, plain flour, brown sugar, baking powder, and salt together. Pour in the melted butter and stir until combined.
3. Take half of the oat mixture and press it into the bottom of the baking pan evenly.
4. In another bowl, combine blackberries, honey, and lemon juice. Spread this blackberry mixture over the oat base.
5. Sprinkle the remaining oat mixture on top of the blackberries. Bake in the oven for about 30-35 minutes, or until golden brown.
