Ingredients
– 200ml tamarind paste
– 1 cup water
– 2 tablespoons sugar
– 1 teaspoon salt
– 1 tablespoon vegetable oil
– 2 cloves garlic, minced
– 1 teaspoon ginger, minced
– 1 teaspoon chili powder
– 4 cups cooked rice
– Fresh coriander for garnish
Method
1. In a pot, mix the tamarind paste and water. Stir until the paste is dissolved.
2. Add sugar and salt to the mixture. Heat the pot on low for about 5 minutes, allowing the flavors to combine.
3. In a separate pan, heat vegetable oil over medium heat. Sauté minced garlic and ginger for 1-2 minutes until fragrant.
4. Sprinkle chili powder into the pan. Cook for another minute, allowing the spices to blend with the garlic and ginger.
5. Combine the tamarind mixture with the sautéed ingredients. Serve over cooked rice and garnish with fresh coriander.
