Ingredients
– 1 cup of rice
– 2 cups of water
– 1 tablespoon of oil
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 bell pepper, chopped
– 1 can of diced tomatoes, 400g
– 1 teaspoon of paprika
– Salt to taste
– 2 cups of cooked chicken, shredded
Method
1. Start by rinsing the rice under cold water until it runs clear.
2. Heat the oil in a large pot over medium heat. Add the chopped onion and sauté until it becomes translucent.
3. Stir in the minced garlic and bell pepper, cooking for another 2 minutes.
4. Pour in the diced tomatoes, water, and paprika. Bring everything to a boil, then reduce the heat.
5. Once the liquid has simmered, add the rice and shredded chicken. Cover the pot and let it cook for about 20 minutes until the rice is tender.
