Ingredients
– 500g chicken breast, diced
– 1 tablespoon olive oil
– 2 cups mixed vegetables (frozen or fresh)
– 2 teaspoons garlic, minced
– 1 tablespoon soy sauce
– 1 teaspoon ginger, grated
– 1 tablespoon cornstarch
– 250ml chicken broth
– 1 tablespoon sesame oil
– 2 cups cooked rice
Method
1. Heat the olive oil in a large pan over medium heat.
2. Add the diced chicken and cook until browned for about 5 to 7 minutes.
3. Stir in the garlic and ginger, cooking for another minute until fragrant.
4. Mix the mixed vegetables, soy sauce, chicken broth, and cornstarch into the pan. Cook until everything is heated through and thickened, about 5 minutes.
5. Serve the stir-fry over the cooked rice and drizzle with sesame oil.
