Ingredients
– 500 g chicken breast, diced
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 red bell pepper, chopped
– 1 zucchini, sliced
– 400 g canned diced tomatoes
– 1 teaspoon dried oregano
– 1 teaspoon salt
– 1 cup rice
Method
1. Heat olive oil in a large pan over medium heat.
2. Add onion and garlic, cooking until softened.
3. Stir in the chicken and cook until browned.
4. Mix in bell pepper, zucchini, tomatoes, oregano, and salt; simmer for 10 minutes.
5. Combine with rice and add 2 cups of water; cover and cook for 15 minutes on low heat.
