Ingredients
– 2 cups all-purpose flour
– 1 cup sugar
– 1 cup water
– 2 tablespoons ghee or butter
– 1 teaspoon cardamom powder
– A pinch of salt
– 2 cups grated coconut
– 1/2 teaspoon baking powder
– 2 ripe bananas, mashed
– Food coloring (optional)
Method
1. Start by mixing the flour, sugar, salt, and baking powder in a large bowl.
2. In another bowl, combine the water, ghee or butter, cardamom powder, and mashed bananas. Stir until mixed well.
3. Gradually add the wet ingredients to the dry mixture. Blend until smooth. If desired, add a few drops of food coloring.
4. Fold in the grated coconut gently until everything is evenly mixed.
5. Pour the batter into a greased baking dish and bake at 180°C for approximately 30 minutes or until golden brown.
