Ingredients

– 250 ml heavy cream
– 50 g sugar
– 1 tsp vanilla extract
– 2 cups self-raising flour
– 1 tsp baking powder
– 60 g butter, softened
– 1 cup milk
– 1 cup jam (any flavor)
– 1 cup strawberries, sliced
– Icing sugar for dusting

Method

1. Begin by preheating the oven to 220°C. Line a baking tray with parchment paper.
2. In a large bowl, mix the flour and baking powder. Add the softened butter. Use your fingers to rub the butter into the flour until it looks like breadcrumbs.
3. Pour in the milk. Stir gently until a dough forms. Turn the dough onto a floured surface and knead it lightly.
4. Roll out the dough to about 2 cm thick. Cut rounds using a glass or cookie cutter and place them on the baking tray.
5. Bake for 12-15 minutes. While cooling, whip the cream with sugar and vanilla until soft peaks form. Serve the scones topped with cream, jam, and strawberries.
