Ingredients
– 4 cucumbers
– 1 teaspoon salt
– 1 tablespoon rice vinegar
– 3 tablespoons almond butter
– 1 tablespoon soy sauce
– 1 tablespoon honey
– 1 teaspoon sesame oil
– 1 teaspoon grated ginger
– 2 spring onions
– 1 tablespoon sesame seeds
Method
1. Start by slicing the cucumbers into thin rounds. Place them in a bowl and sprinkle with salt. Let them sit for about 10 minutes.
2. While the cucumbers are resting, prepare the dressing. In a separate bowl, mix together the rice vinegar, almond butter, soy sauce, honey, sesame oil, and grated ginger. Stir until smooth.
3. Rinse the salted cucumbers under cold water to remove excess salt. Drain well and return them to the bowl.
4. Add the dressing to the cucumbers and toss everything together until the cucumbers are well coated.
5. Finally, chop the spring onions and sprinkle them along with sesame seeds over the salad. Serve immediately.
