Ingredients
– 500 g chicken breast, diced
– 2 tbsp olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 red bell pepper, diced
– 200 g canned diced tomatoes
– 1 tsp dried oregano
– 1 tsp salt
– 1/2 tsp pepper
– 300 ml chicken broth
Method
1. Heat the olive oil in a large pan over medium heat.
2. Sauté the onion and garlic until fragrant and soft.
3. Add the diced chicken and cook until it’s no longer pink.
4. Stir in the bell pepper, canned tomatoes, oregano, salt, and pepper.
5. Pour in the chicken broth and simmer for about 15 minutes until thickened.
