Crispy Roasted Fingerling Potatoes: Perfect Rustic Side Dish

Ingredients

– 900 g fingerling potatoes
– 60 ml olive oil
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon dried rosemary
– 1 teaspoon salt
– ½ teaspoon black pepper
– 30 g grated parmesan cheese
– 1 tablespoon chopped fresh parsley
– Lemon wedges (for serving)

Method

1. Preheat your oven to 220°C.
2. Wash the fingerling potatoes thoroughly and cut them in half lengthwise.
3. Toss the potatoes in a large bowl with olive oil, garlic powder, onion powder, dried rosemary, salt, and black pepper until they are well coated.
4. Spread the potatoes in a single layer on a baking sheet, cut side down. Roast them in the oven for about 25 minutes or until golden and crispy.
5. Remove from the oven, sprinkle with grated parmesan cheese and parsley, and serve with lemon wedges.
