Ingredients
– 1 cup (250 g) soft brown sugar
– 1 cup (225 g) unsalted butter, softened
– 1 large egg
– 1 teaspoon vanilla extract
– 1 ½ cups (180 g) all-purpose flour
– 1 teaspoon baking soda
– 1 teaspoon salt
– 3 cups (240 g) rolled oats
– 1 cup (150 g) raisins
– ½ cup (80 g) chopped nuts (optional)
Method
1. Preheat the oven to 180°C (350°F). Line a baking tray with baking paper.
2. In a mixing bowl, cream the softened butter and brown sugar together until smooth.
3. Beat in the egg and vanilla extract until combined.
4. In another bowl, mix the flour, baking soda, and salt. Gradually add this mixture into the wet ingredients.
5. Stir in the oats, raisins, and nuts if using, until everything is well combined. Drop spoonfuls of the mixture onto the prepared tray. Bake for 10-12 minutes until golden brown.
