Ingredients
– 2 medium cucumbers

Method
1. Start by cutting the cucumbers in half lengthwise.
2. Use a rolling pin or a heavy object to lightly smash the cucumbers.
3. Cut the smashed cucumbers into bite-sized pieces.
4. In a large bowl, mix together the salt, garlic, rice vinegar, sesame oil, soy sauce, and sugar.
5. Add the cucumber pieces, sesame seeds, and spring onions. Toss everything gently and garnish with fresh coriander.
