Ingredients
– 2 cups heavy cream
– 1 cup blue cheese, crumbled
– 1/2 cup milk
– 1 tablespoon gelatin
– 1/4 cup water
– 2 pears, peeled and sliced
– 1/2 cup sugar
– 1 star anise
– 1 cinnamon stick
– 1/2 teaspoon vanilla extract
Method
1. Start by sprinkling the gelatin over the cold water in a small bowl. Let it sit for about 5 minutes to soften.
2. In a saucepan, heat the heavy cream, milk, and sugar over medium heat. Stir until the sugar dissolves completely, then remove it from the heat.
3. Add the softened gelatin and blue cheese to the warm cream mixture. Whisk until the cheese is melted and the mixture is smooth.
4. Pour the mixture into small cups or ramekins. Refrigerate for at least 4 hours or until set.
5. To prepare the pears, combine sugar, sliced pears, star anise, cinnamon stick, and vanilla in a saucepan. Cook over medium heat for about 15 minutes until soft. Serve the panna cotta topped with the spiced poached pears.
