Ingredients
– 2 cups of rice
– 4 cups of vegetable or chicken broth
– 1 onion, diced
– 2 cloves of garlic, minced
– 2 cups of mixed vegetables (like carrots and peas)
– 1 teaspoon of dried herbs (such as thyme or oregano)
– 3 tablespoons of olive oil
– Salt and pepper to taste
– 1 cup of cooked chicken or tofu (optional)
– Fresh parsley for garnish
Method
1. Start by heating olive oil in a large pot over medium heat. Sauté the diced onion and garlic until they become soft.
2. Add the rice to the pot and stir it for a couple of minutes until it starts to look slightly translucent.
3. Pour in the broth along with the mixed vegetables and dried herbs. Season with salt and pepper.
4. Bring everything to a boil, then reduce the heat to low. Cover and let it simmer for about 20 minutes.
5. If using chicken or tofu, add it to the pot just before serving. Fluff the rice with a fork and sprinkle fresh parsley on top.
