Ingredients
– 4 large onions, thinly sliced
– 2 tbsp butter
– 1 tbsp olive oil
– 1 tsp sugar
– 1 tsp salt
– 4 cups beef broth
– 1 cup water
– 1 cup grated cheese
– 4 slices of crusty bread
– Fresh thyme (optional)
Method
1. Melt butter and olive oil in a large pot over medium heat. Add the onions, sugar, and salt. Cook until the onions are soft and golden brown, stirring occasionally.
2. Pour in the beef broth and water. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes.
3. Meanwhile, toast the bread slices until golden.
4. Once the soup is ready, ladle it into bowls. Place a slice of toasted bread on top of each bowl.
5. Sprinkle cheese on the bread. Place the bowls under the grill until the cheese is bubbly and golden.
