Ingredients
– 250g rhubarb, chopped
– 100g sugar
– 1 teaspoon vanilla extract
– 250ml cream
– 3 eggs
– 50g plain flour
– 1 pre-made tart shell
– Icing sugar for dusting (optional)
Method
1. Preheat the oven to 180°C (350°F).
2. Combine the chopped rhubarb and sugar in a bowl. Let it sit for about 10 minutes.
3. In another bowl, whisk together the cream, eggs, vanilla extract, and plain flour until smooth.
4. Spread the rhubarb mixture evenly in the tart shell, then pour the cream mixture over the top.
5. Bake in the oven for 30-35 minutes or until the filling is set and slightly golden.
