Honey Roasted Carrots
Ingredients
– 800 g carrots, peeled and cut into sticks
– 2 tbsp olive oil
– 2 tbsp honey
– 1 tsp salt
– ½ tsp black pepper
– 1 tsp thyme (dried or fresh)
– 1 tbsp lemon juice
– 30 g butter, melted
Method
1. Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
2. In a large bowl, toss the carrot sticks with olive oil, honey, salt, black pepper, thyme, and melted butter.
3. Spread the carrot mixture evenly on the prepared baking tray.
4. Roast them in the oven for about 25-30 minutes, stirring halfway through.
5. Once tender and caramelized, remove them from the oven and drizzle with lemon juice before serving.
