Ingredients
4 medium-sized potatoes
60 ml olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 tablespoon fresh parsley (chopped)
1 cup grated cheese
1 cup sour cream
Optional: Bacon bits
Method
Preheat the oven to 200 degrees Celsius.
Wash and dry the potatoes. Cut slits into each potato but don’t cut all the way through.
Place the potatoes on a baking tray. Brush them with olive oil and sprinkle with salt, pepper, garlic powder, and paprika.
Bake the potatoes in the oven for about 45 minutes or until they are tender.
Top with cheese, parsley, and sour cream before serving. Add bacon bits if desired.
