Zucchini, Corn, and White Bean Chili Recipe
Ingredients
1 tablespoon olive oil
1 onion, diced
2 garlic cloves, minced
2 zucchinis, diced
1 can corn, drained (about 420 g)
1 can white beans, drained and rinsed (about 400 g)
400 g diced tomatoes
1 tablespoon chili powder
½ teaspoon cumin
Salt and pepper to taste
Method
1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until it becomes soft. This will take about 5 minutes.
2. Stir in the garlic and zucchini. Cook for another 3 minutes, stirring often.
3. Add the corn, white beans, diced tomatoes, chili powder, and cumin. Mix everything together well.
4. Bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 15 minutes.
5. Season with salt and pepper to taste before serving.
