Creamy Coconut Noodles
Ingredients
– 200 ml coconut milk
– 2 cups noodle (any type you prefer)
– 1 tablespoon vegetable oil
– 2 cloves garlic, minced
– 1 tablespoon fresh ginger, grated
– 1 tablespoon soy sauce
– 1 tablespoon lime juice
– 1 cup mixed vegetables (fresh or frozen)
– Salt and pepper to taste
– Fresh herbs for garnish (like cilantro or basil)
Method
1. Start by cooking the noodles according to package instructions until they are tender. Drain and set aside.
2. Heat vegetable oil in a large pan over medium heat. Add minced garlic and grated ginger, sauté for about 1 minute until fragrant.
3. Pour in the coconut milk, soy sauce, and lime juice. Stir everything together and let it simmer for a few minutes.
4. Add the mixed vegetables to the pan. Ensure they are cooked through, stirring occasionally for about 5 minutes.
5. Mix in the cooked noodles. Season your dish with salt and pepper. Serve hot, garnished with fresh herbs.
