Minty Summer Salad Recipe
Ingredients
2 cups red cabbage, thinly sliced
2 cups lettuce, chopped
1 cup tomatoes, diced
1 small onion, thinly sliced
1/2 cup fresh mint leaves, chopped
1/4 cup olive oil
2 tablespoons lemon juice
Salt to taste
Pepper to taste
Method
1. Start by placing the red cabbage and lettuce in a large mixing bowl.
2. Add the diced tomatoes and thinly sliced onion to the bowl.
3. Toss in the chopped mint leaves for a fresh flavor.
4. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
5. Pour the dressing over the salad mix and toss everything well to combine.
