Ingredients
1 cup split yellow lentils
1 teaspoon turmeric powder
2 tablespoons oil
1 teaspoon mustard seeds
1 tablespoon chopped ginger
2 green chilies, chopped
1 cup diced vegetables (carrot, beans, or peas)
1 teaspoon salt (or to taste)
2 tablespoons fresh coriander leaves, chopped
2 cups water
Method
1. Rinse the lentils under cold water until the water runs clear.
2. Combine the lentils, turmeric powder, and water in a pot. Bring to a boil and then let it simmer until the lentils are soft.
3. Heat oil in a pan. Add mustard seeds and let them splutter.
4. Stir in the ginger, green chilies, and diced vegetables. Cook until the vegetables are tender.
5. Mix in the cooked lentils and salt. Garnish with fresh coriander leaves before serving.
