Ingredients
– 1 kg chicken thighs, boneless and skinless
– 2 tablespoons olive oil
– 1 large onion, chopped
– 3 garlic cloves, minced
– 400 g diced tomatoes
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– 300 ml chicken broth
– Salt, to taste
– Pepper, to taste
Method
1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until it’s soft, about 5 minutes.
3. Stir in minced garlic and cook for another minute.
4. Add the chicken thighs, diced tomatoes, oregano, basil, chicken broth, salt, and pepper.
5. Bring to a boil, then reduce to low heat and simmer for 30 minutes or until the chicken is fully cooked.
