Brussels Sprouts, Apple & Halloumi Salad: A Fresh, Tasty Recipe

Ingredients

– 500 g Brussels sprouts
– 1 large apple
– 200 g halloumi cheese
– 2 tablespoons olive oil
– 50 ml balsamic vinegar
– 50 g walnuts
– 1 teaspoon honey
– Salt to taste
– Pepper to taste
– Fresh parsley (a handful)

Method

1. Preheat your oven to 200°C.
2. Trim the Brussels sprouts and cut them in half. Place them on a baking tray and drizzle with 1 tablespoon of olive oil. Add a pinch of salt and pepper. Roast for 20 minutes until they are golden and tender.
3. While the sprouts are roasting, chop the apple into small pieces. In a pan, heat the remaining olive oil over medium heat. Add the chopped apple and walnuts. Sauté for about 5 minutes until the apples are slightly soft.
4. Cut the halloumi cheese into cubes. Add it to the pan with the apple and walnuts, cooking for another 3-5 minutes until the cheese is golden.
5. Combine the Brussels sprouts, apple mixture, honey, and balsamic vinegar in a serving bowl. Toss gently. Top with chopped fresh parsley before serving.
