Ingredients

– 300 g pasta
– 100 g nduja
– 250 g mascarpone cheese
– Zest and juice of 1 lemon
– 2 cloves of garlic
– 50 ml olive oil
– Salt, to taste
– Black pepper, to taste
– Fresh parsley, for garnish

Method

1. Boil a large pot of salted water and cook the pasta according to package instructions until al dente.
2. While the pasta cooks, heat olive oil in a pan over medium heat. Add minced garlic and cook for one minute until fragrant.
3. Stir in nduja and let it cook, allowing the flavors to meld for about two minutes.
4. Once the pasta is ready, drain it and add it to the pan. Toss everything together, then mix in mascarpone, lemon zest, and lemon juice.
