Ingredients

– 1 cup frozen peas
– 2 medium courgettes (zucchini), sliced
– 1 bulb of fennel, thinly sliced
– 1 small red onion, finely chopped
– 1/4 cup fresh dill, chopped
– 1/4 cup lemon juice
– 1/4 cup olive oil

– 1 cup feta cheese, crumbled

Method

1. Start by boiling water in a pot. Add the frozen peas and cook them for 2-3 minutes until heated through. Drain and set aside.
2. Heat a little olive oil in a pan over medium heat. Sauté the sliced courgettes and fennel for about 5 minutes until they are tender but still crisp.
3. Combine the cooked peas, sautéed vegetables, and chopped red onion in a large bowl.
