Ingredients
– 500 g beef sirloin, sliced
– 1 cup cooked rice
– 1 cup black beans, drained
– 1 cup corn
– 1 cup cherry tomatoes, halved
– 1 cup lettuce, shredded
– 100 ml plain yogurt
– 3 tbsp chipotle sauce
– 1 lime, juiced
– Salt and pepper to taste
Method
1. In a pan, cook the sliced beef over medium heat until browned. Season with salt and pepper.
2. Combine yogurt, chipotle sauce, and lime juice in a bowl, mixing well to create the dressing.
3. Place cooked rice at the bottom of bowls, then layer black beans, corn, cherry tomatoes, and cooked beef on top.
4. Drizzle the chipotle dressing evenly over the bowls.
5. Finish by adding shredded lettuce to each bowl.
