Delicious Spaghetti Carbonara Recipe: A Classic Italian Dish

Ingredients

– 400g spaghetti
– 150g pancetta or bacon, diced
– 3 large eggs
– 100g grated Parmesan cheese
– 50ml pasta cooking water
– Salt, to taste
– Black pepper, to taste
– 2 cloves garlic, minced
– Fresh parsley, chopped (for garnish)

Method

1. Start by cooking the spaghetti in a large pot of salted boiling water until it’s al dente.
2. While the pasta cooks, heat a pan over medium heat. Add diced pancetta or bacon, cooking until it becomes crispy.
3. In a bowl, whisk together eggs, grated Parmesan cheese, salt, and black pepper. Set this mixture aside.
4. As soon as the spaghetti finishes cooking, reserve 50ml of the pasta water and then drain the pasta. Add the hot pasta to the pan with pancetta.
5. Remove the pan from the heat and quickly mix in the egg mixture. Stir well, adding the reserved pasta water little by little to create a creamy sauce. Garnish with garlic and parsley before serving.
