Ingredients
– 300 g pasta (your choice)
– 150 g chorizo, diced
– 400 g canned chopped tomatoes
– 100 ml mascarpone cheese
– 2 cloves garlic, minced
– 1 tablespoon olive oil
– 1 teaspoon dried oregano
– Salt, to taste
– Black pepper, to taste
– Fresh basil, for garnish
Method
1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
2. Heat the olive oil in a large frying pan over medium heat. Add the diced chorizo and cook until browned.
3. Stir in the minced garlic and cook for another minute until fragrant.
4. Pour in the chopped tomatoes and dried oregano. Simmer for 5 minutes, then mix in the mascarpone cheese.
5. Combine the pasta with the sauce, stirring well. Season with salt and black pepper. Serve warm, garnished with fresh basil.
