Ingredients
– 3 medium courgettes (zucchini)
– 200 g feta cheese
– 100 ml Greek yogurt
– 40 ml olive oil
– 1 clove garlic, minced
– 1 teaspoon dried oregano
– Salt, to taste
– Black pepper, to taste
– 1 tablespoon lemon juice
– Fresh herbs for garnish (like dill or parsley)
Method
1. Slice the courgettes into rounds about 1 cm thick. Heat some olive oil in a pan over medium heat.
2. Once the oil is hot, add the courgette slices. Cook them for about 2-3 minutes on each side until they are lightly browned and tender.
3. In a bowl, mix the feta cheese, Greek yogurt, minced garlic, dried oregano, lemon juice, salt, and black pepper. Whip it until smooth and creamy.
4. Arrange the cooked courgettes on a plate. Spread the whipped feta mixture over the top of them.
5. Finally, sprinkle fresh herbs over the dish for added flavor and decoration.
