Ingredients
– 2 cups gigante beans
– 4 cups water
– 1 medium onion, chopped
– 3 garlic cloves, minced
– 1 can (400g) diced tomatoes
– 1 teaspoon smoked paprika
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 cup olive oil
– Fresh parsley, chopped (for garnish)
Method
1. Start by soaking the gigante beans in water overnight. This softens them and helps with cooking.
2. Drain the beans and place them in a pot. Add 4 cups of fresh water and bring to a boil.
3. Once boiling, reduce the heat to a simmer. Cook the beans for about 1 hour or until they are tender.
4. In a separate pan, heat olive oil over medium heat. Add the onion and garlic and cook until soft, around 5 minutes.
5. Stir in the diced tomatoes, smoked paprika, salt, and pepper. Combine this mixture with the cooked beans. Let everything simmer together for 10 minutes.
