Ingredients
– 50 g peach gum
– 30 g snow fungus
– 200 g rock sugar
– 1.5 L water
– 3 cups coconut milk
– 1 cup diced peaches
– 1 cup diced mangoes
– 1 tsp vanilla extract
– 2 tbsp goji berries
– 1 tbsp lemon juice
Method
1. Soak the peach gum and snow fungus in water for about 2-3 hours until they soften.
2. Rinse both ingredients well and remove any impurities. Cut the snow fungus into smaller pieces.
3. In a large pot, combine water and rock sugar. Bring to a boil to dissolve the sugar.
4. Add the soaked peach gum and snow fungus to the pot. Simmer for 30 minutes until they become tender.
5. Stir in coconut milk, diced peaches, mangoes, vanilla extract, goji berries, and lemon juice. Cook for an additional 10 minutes before serving.
