Delicious Pandan Gula Melaka Coconut Filling Recipe For Desserts

Ingredients

– 250 ml coconut milk
– 100 g palm sugar (or brown sugar)
– 1 tsp pandan extract
– 1/4 tsp salt
– 2 tbsp cornstarch
– 100 g desiccated coconut
– 1/2 cup water
– 1 cup glutinous rice flour
– 1/4 cup sugar
– 120 ml warm water

Method

1. Combine coconut milk, palm sugar, pandan extract, and salt in a small pot. Heat over medium until sugar fully dissolves. Stir occasionally.
2. Mix cornstarch with water in a separate bowl. After combining, add the cornstarch mixture to the coconut mixture. Stir until it thickens slightly.
3. Add desiccated coconut and mix well. Remove the pot from heat and let the filling cool a bit.
4. In another bowl, combine glutinous rice flour and sugar. Pour in warm water slowly and knead until a smooth dough forms.
5. Divide the dough into small balls. Flatten each ball, place some coconut filling inside, and seal it up. Steam the filled dough balls for around 15 minutes.
