Ingredients
– 1 cup orzo pasta
– 2 cups water
– ½ cup sun-dried tomatoes, chopped
– ½ cup feta cheese, crumbled
– 1 cup baby spinach, chopped
– ¼ cup olives, sliced
– ¼ cup red onion, diced
– 2 tablespoons olive oil
– 1 tablespoon lemon juice
– Salt and pepper to taste
Method
1. Start by boiling water in a pot. Add the orzo pasta and cook for about 8-10 minutes until it’s tender.
2. Drain the orzo in a colander and let it cool for a few minutes.
3. In a large bowl, mix together the sun-dried tomatoes, feta cheese, baby spinach, olives, and red onion.
4. Add the cooled orzo to the bowl. Stir in the olive oil, lemon juice, salt, and pepper. Mix everything well.
5. Serve the salad immediately or chill it in the fridge for later.
