Scotch Eggs Recipe

Ingredients
8 large eggs
500 g sausage meat
1 cup plain flour
1 cup breadcrumbs
1 tsp salt
1 tsp black pepper
1 tsp dried thyme
1 tsp Worcestershire sauce
Vegetable oil for frying

Method
1. Bring a pot of water to a boil. Carefully add 4 eggs and cook for 6-7 minutes, then take them out and place them in cold water for a few minutes. This will stop them from cooking further.
2. Peel the cooled eggs and set them aside. In a bowl, mix sausage meat, salt, pepper, thyme, and Worcestershire sauce together.
3. Divide the sausage mixture into 4 equal parts. Flatten each portion in your hands and wrap it around one egg. Make sure the egg is fully covered.
4. Prepare three shallow bowls — one with flour, one with beaten eggs, and one with breadcrumbs. Roll each sausage-wrapped egg first in flour, then dip it in the egg, and finally coat it with breadcrumbs.
5. Heat vegetable oil in a large pan over medium heat. Fry each egg until golden brown and cooked through, about 5-7 minutes. Drain on paper towels and serve warm.
