Vegan Butternut Squash Pasta With Veggie Sausage Recipe

Ingredients
400 g butternut squash, peeled and diced
200 g pasta (your choice)
1 tbsp olive oil
300 g veggie sausage, sliced
1 large onion, chopped
2 cloves garlic, minced
400 g canned diced tomatoes
1 tsp dried Italian herbs
200 ml vegetable broth
Salt and pepper to taste

Method
1. Cook the pasta according to package instructions. Drain and set aside.
2. Heat olive oil in a large pan over medium heat. Add the onion and cook until softened.
3. Stir in garlic and veggie sausage. Cook for about 5 minutes, until the sausage is lightly browned.
4. Add the diced butternut squash, canned tomatoes, vegetable broth, and dried herbs. Season with salt and pepper. Simmer until the squash is tender, about 15 minutes.
5. Combine the cooked pasta with the sauce. Mix well and serve hot.
