Ingredients
1 tbsp vegetable oil
1/4 onion, diced
1 garlic clove, minced
2 cups vegetable broth
300 g soft tofu, drained and cubed
1 tsp soy sauce
1/2 tsp salt
1 egg
1 green onion, sliced
1 tsp sesame oil
Method
Heat the vegetable oil in a pot over medium heat.
Add the diced onion and minced garlic, then sauté until the onion is soft.
Pour in the vegetable broth and bring the mixture to a boil.
Add the soft tofu, soy sauce, and salt. Simmer for 5 minutes.
Crack the egg into the soup and let it cook for 1-2 minutes. Finish by stirring in sliced green onion and drizzle with sesame oil.
