Ingredients
– 2 cups lentils
– 1 medium onion, chopped
– 1 large tomato, chopped
– 1 tablespoon ginger, grated
– 1 tablespoon garlic, minced
– 1 teaspoon turmeric powder
– 1 teaspoon salt
– 3 cups water
– 2 tablespoons oil
– Fresh coriander for garnish
Method
1. Heat oil in a pan over medium heat. Add the chopped onions and sauté until soft and golden.
2. Stir in the ginger and garlic, cooking until fragrant. Then add chopped tomatoes, cooking until they break down.
3. Mix in the turmeric powder and salt. Next, add the lentils and water, bringing it all to a boil.
4. Reduce heat and let simmer for about 20 minutes, or until lentils are tender.
5. Garnish with fresh coriander before serving.
