Ingredients
1 cup cooked quinoa
1 cup cherry tomatoes, halved
1 cucumber, diced
1 cup canned chickpeas, rinsed
1/2 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
1/4 cup olive oil
2 tablespoons lemon juice
1 clove garlic, minced
Salt and pepper to taste
Method
Combine cooked quinoa, cherry tomatoes, and cucumber in a large bowl.
Add canned chickpeas, feta cheese, and parsley.
In a smaller bowl, whisk together olive oil, lemon juice, and minced garlic.
Pour the dressing over the salad mix.
Season with salt and pepper. Toss everything together until well combined.
