Ingredients
– 1 cup lentils
– 4 cups water
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 carrot, diced
– 1 zucchini, diced
– 1 cup kale, chopped
– 1 teaspoon salt
– 1 teaspoon pepper
Method
1. Rinse lentils under cold water until clean.
2. In a large pot, heat olive oil over medium heat.
3. Sauté onion and garlic for about 3 minutes until soft.
4. Add carrot, zucchini, kale, salt, and pepper to the pot. Stir for another 5 minutes.
5. Add lentils and water. Bring to a boil, then let it simmer for 25 minutes until lentils are tender.
