Ingredients
– 1 cup pasta
– 2 cups water
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 can diced tomatoes
– 1 teaspoon dried oregano
– 1 cup spinach, chopped
– Salt and pepper to taste
– Grated cheese for serving
Method
1. In a large pot, bring the water to a boil. Add the pasta and cook according to package instructions until tender.
2. While the pasta cooks, heat olive oil in a pan over medium heat. Sauté the chopped onion until soft.
3. Add minced garlic to the pan and cook for another minute until fragrant.
4. Stir in the diced tomatoes and dried oregano. Let the mixture simmer for about 5 minutes.
5. Once the pasta is cooked, drain it and mix it with the tomato sauce. Add chopped spinach, salt, and pepper. Top with grated cheese before serving.
