Ingredients
– 2 cups sliced vegetables (like bell peppers, carrots, and zucchini)

– 4 eggs

– 1 cup shredded cheese

Method
1. Heat a large nonstick ceramic pan over medium heat.
2. Add olive oil, then throw in the sliced vegetables and garlic. Sauté them for about 5 minutes until they start to soften.
3. Sprinkle salt, pepper, and paprika over the veggies. Stir everything together for another 2 minutes.
4. In a bowl, whisk together the eggs and milk. Pour the egg mixture over the vegetables in the pan.
5. Cook until the eggs begin to set, then sprinkle cheese on top. Cover the pan for a few minutes until the cheese melts. Serve garnished with fresh herbs.
