Ingredients
2 cups basmati rice
4 cups water
1 tsp cumin seeds
1 large onion, sliced
2 cups mixed vegetables, chopped (like carrots, peas, and beans)
1 tsp turmeric powder
1 tsp red chili powder
Salt to taste
2 tbsp cooking oil
Fresh coriander leaves for garnish
Method
Heat oil in a large pot over medium heat.
Add cumin seeds and sliced onion. Sauté until the onion becomes golden brown.
Stir in chopped mixed vegetables, turmeric powder, red chili powder, and salt. Cook for about 5 minutes, stirring occasionally.
Next, add the rinsed basmati rice and water to the pot. Bring to a boil.
Reduce heat, cover, and simmer for about 15-20 minutes until rice is cooked. Fluff with a fork, garnish with coriander leaves, and serve warm.
