Ingredients
500 g chicken breast, diced
1 large onion, chopped
2 cloves garlic, minced
1 red bell pepper, sliced
1 zucchini, sliced
1 cup cherry tomatoes, halved
1 tsp dried oregano
2 cups vegetable broth
Salt, to taste
Pepper, to taste
Method
Heat a large pan over medium heat. Add diced chicken and cook until browned.
Stir in the chopped onion and minced garlic, cooking until softened.
Add the sliced red bell pepper and zucchini, cooking for about 5 minutes.
Mix in halved cherry tomatoes, dried oregano, vegetable broth, salt, and pepper.
Simmer for 15-20 minutes, until the chicken is cooked through and the veggies are tender.
