Ingredients
- 2 cups of rice
- 4 cups of water
- 1 tablespoon of olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 can (400g) of diced tomatoes
- 1 teaspoon of paprika
- 1 teaspoon of salt
- 1 cup of frozen peas
Method
1. Rinse the rice under cold water until the water runs clear, then drain it.
2. In a medium pot, bring the water to a boil. Add salt and rice, then reduce the heat to low. Cover the pot and simmer for 15 minutes.
3. While the rice cooks, heat the olive oil in a separate pan over medium heat. Add the diced onion and garlic, sauté until soft.
4. Stir in the bell pepper and cook for another 5 minutes. Add the diced tomatoes, paprika, and frozen peas. Stir until everything is heated through.
5. Fluff the rice with a fork and mix it with the vegetable mixture. Serve warm.
